Ingredients

  • 2 large baking potatoes
  • 200g block of feta cheese
  • 1 head of garlic
  • Olive oil
  • Fresh basil
  • Dried thyme
  • Dried oregano
  • Lemon
  • Honey

Instructions

  1. Preheat your oven to 200C (390F).
  2. Wash and cube the baking potatoes, then par-boil them in a saucepan for 6-8 minutes.
  3. Drain and season the potatoes with olive oil, dried thyme, oregano, salt, and pepper.
  4. Roast the seasoned potatoes in the oven for 30-40 minutes until golden brown.
  5. Add the feta cheese block and garlic head to the baking dish; squeeze lemon juice over them.
  6. Roast again for another 15 minutes until everything is perfectly melded together.
  7. Mash the roasted garlic and mix it back into the dish along with chopped basil and honey before serving.
