  • 1 lb ground beef
  • Boston Bibb lettuce
  • 2 cloves garlic (minced)
  • 2 tsp grated fresh ginger
  • 1 medium red bell pepper (finely diced)
  • ½ c shredded carrots
  • 4 whole green onions (sliced into 1” pieces)
  • ¼ cup maple syrup (brown sugar, or coconut sugar)
  • ¼ cup coconut aminos (tamari, or soy sauce)
  • 2 tsp rice vinegar
  • 1 tbsp toasted sesame oil
  • ¼½ tsp red pepper flakes (optional)
  • 2 tsp arrowroot powder (or cornstarch)
  • 1 tbsp olive oil
  • kosher salt (to taste)
  • ground pepper (to taste)
  • sesame seeds (to taste, for garnish)
  • steamed white rice or sauteed cauliflower rice (optional)

Instructions

  1. Make the sauce by whisking together maple syrup, coconut aminos, rice vinegar, sesame oil, and arrowroot powder in a measuring cup until smooth.
  2. In a skillet over medium-high heat, add olive oil and ground beef; cook until browned.
  3. Stir in minced garlic and grated ginger for 1–2 minutes until aromatic.
  4. Add diced bell pepper and shredded carrots; cook until tender but crisp.
  5. Pour the sauce over the beef mixture, stir well, and simmer until slightly thickened.
  6. Serve the filling in washed lettuce leaves garnished with sesame seeds.
