  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 2 tsp ground cinnamon
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups finely diced Honeycrisp or Gala apples
  • 2 cups powdered sugar
  • 1/3 cup + 2 tbsp apple cider or juice

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a nonstick baking sheet.
  2. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. Set aside.
  3. In a large bowl, combine melted butter and sugar; mix well. Add egg, vanilla extract, and applesauce; whisk until smooth.
  4. Gradually add dry ingredients to wet ingredients and stir gently. Fold in diced apples until evenly mixed.
  5. Drop tablespoon-sized portions onto the prepared baking sheet, spacing them two inches apart.
  6. Bake for about 10 minutes until golden brown.
  7. While baking, prepare the glaze by whisking powdered sugar with apple cider until pourable.
  8. Brush glaze over warm fritter bites after baking and allow to set before serving.
