- 1/2 cup unsweetened applesauce
- 1 1/2 cups finely diced Honeycrisp or Gala apples
- 2 cups powdered sugar
- 1/3 cup + 2 tbsp apple cider or juice
Instructions
- Preheat your oven to 400°F (200°C) and grease a nonstick baking sheet.
- In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. Set aside.
- In a large bowl, combine melted butter and sugar; mix well. Add egg, vanilla extract, and applesauce; whisk until smooth.
- Gradually add dry ingredients to wet ingredients and stir gently. Fold in diced apples until evenly mixed.
- Drop tablespoon-sized portions onto the prepared baking sheet, spacing them two inches apart.
