  • 24 ounces full-fat cream cheese (680 grams) (room temperature)
  • 3/4 cup granulated sugar (150 grams)
  • 1/4 cup brown sugar (50 grams)
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (120 ml) (room temperature)
  • 3 large eggs (room temperature)
  • Boiling water (for the water bath)
  • Salted caramel sauce

Instructions

  1. Preheat the oven to 350°F (180°C). Prepare a 9-inch springform pan by wrapping it in foil and greasing it.
  2. In a mixing bowl, combine graham crumbs, brown sugar, cinnamon, and melted butter to form the crust; press into the bottom of the pan.
  3. Mix cream cheese, sugars, cinnamon, cornstarch, vanilla extract, and sour cream until smooth. Add eggs one at a time until well blended.
  4. Prepare spiced apple filling by combining sliced apples with brown sugar and cinnamon; layer over the cheesecake batter.
  5. Prepare crumble topping with flour, brown sugar, oats, cinnamon, and melted butter; sprinkle over the apples.
